Mexican Mint Marigold is a wonderful replacement for Tarragon. Tarragon is very difficult to grow here while Mexican Mint Marigold will thrive. This is a bushy perennial with bright green leaves and happy yellow flowers. Here along the coast Mexican Mint Marigold is evergreen. The cold might bite it but you can snip it back to the ground and it will return when the weather is warm.
When adding Mexican Mint Marigold to a dish that is being cooked add it late to save the flavor. Mexican Mint Marigold is exceptional when added to salads.
